Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond milk or other plant-based milk
  • 1 cup fresh orange juice
  • Zest of 1 orange
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh orange juice (for glaze)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Make the Base: In a medium bowl, combine the flour, powdered sugar, melted coconut oil, and almond milk. Stir until a dough forms. Press the dough evenly into the bottom of the prepared baking pan.
  3. Bake the Base: Bake the crust for 15-20 minutes, or until lightly golden. Allow it to cool slightly while you prepare the filling.
  4. Prepare the Filling: In a separate bowl, whisk together the fresh orange juice, orange zest, cornstarch, baking powder, and salt until smooth. Pour this mixture over the baked crust.
  5. Bake Again: Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm to the touch.
  6. Cool and Glaze: Allow the bars to cool completely in the pan. Once cool, prepare the glaze by mixing powdered sugar with fresh orange juice. Drizzle over the bars before cutting into squares.
  7. Serve: Slice into squares and serve. Store leftovers in an airtight container in the fridge.
