Rich Vegan Peanut Butter Blondies With Melty Chocolate Chips

I baked these vegan peanut butter blondies for my friend’s birthday last month. The peanut butter made the blondies rich, and she said they were the best birthday treat she had ever had.

Ideal as a vegan dessert, these blondies are easy to make and require minimal ingredients. Whether you’re following a vegan diet or simply want to enjoy a delicious treat, these blondies are sure to please.

Decadent Vegan Peanut Butter Blondies

Rich vegan peanut butter blondies topped with chocolate chips in a baking dish, with cut squares on a wooden table.

These blondies feature a rich and chewy texture, with the comforting flavors of peanut butter complemented by pockets of sweet chocolate. The recipe takes about 30 minutes to prepare and bake, yielding a batch of 12 blondies.

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup almond milk or any plant-based milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dairy-free chocolate chips

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, combine the peanut butter, brown sugar, maple syrup, almond milk, and vanilla extract. Mix until smooth and well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Combine Everything: Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix. Gently fold in the chocolate chips.
  5. Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Allow the blondies to cool in the pan for about 10 minutes before transferring them to a wire rack. Once completely cooled, cut into squares and enjoy!
