Sticky Vegan Buns With a Rich Caramel Pecan Topping

I made this Vegan Sticky Buns for my aunt’s garden party last month. The pecans sat sticky under caramel, and my dad loved them.

Delicious Vegan Sticky Buns Recipe

Golden brown sticky vegan buns with caramel and pecans on a rustic table.

These vegan sticky buns feature a soft and tender dough slathered with a sticky caramel sauce and crunchy pecans. The recipe takes about 2 hours from start to finish, including rising time, and makes 12 buns perfect for sharing.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup almond milk or any plant-based milk
  • 1/4 cup coconut sugar or brown sugar
  • 1/4 cup coconut oil, melted
  • 1 tablespoon instant yeast
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup
  • 1/2 cup pecans, chopped
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup maple syrup (for topping)
  • 1/4 cup coconut sugar (for topping)

Instructions

  1. Prep the Dough: In a mixing bowl, combine the warm almond milk, coconut sugar, and yeast. Let it sit for about 5 minutes until frothy. Stir in the melted coconut oil and vanilla extract.
  2. Mix the Flour: Add the flour and salt to the mixture, and knead until a soft dough forms. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.
  3. Prepare the Topping: In a small saucepan, combine 1/4 cup maple syrup, coconut sugar, and chopped pecans. Heat until the sugar dissolves and the mixture is bubbly. Pour this mixture into the bottom of a greased baking dish.
  4. Roll Out the Dough: Once the dough has risen, roll it out on a floured surface into a rectangle about 1/4 inch thick. Sprinkle cinnamon over the surface.
  5. Shape the Buns: Roll the dough tightly into a log and cut into 12 equal pieces. Place them in the prepared baking dish on top of the topping mixture.
  6. Second Rise: Cover the buns and let them rise again for about 30 minutes.
  7. Bake: Preheat the oven to 350°F (175°C). Bake the buns for 25-30 minutes or until golden brown.
  8. Cool and Serve: Allow the buns to cool slightly before flipping the dish upside down onto a plate to reveal the sticky topping. Enjoy your delicious sticky vegan buns warm!
