Delicious Vegan Maple Pecan Rolls

This recipe yields light and fluffy rolls filled with a sweet maple pecan mixture and topped with a luscious glaze. It takes about 2 hours from start to finish (including rising time) and serves 12 rolls.
Ingredients
- 4 cups all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1 cup almond milk (or any plant-based milk)
- 1/3 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 cup pecans, chopped
- 1/4 cup brown sugar
- 1/4 cup vegan butter, softened
- 1/2 cup powdered sugar (for glaze)
- 1-2 tablespoons almond milk (for glaze)
Instructions
- Activate the Yeast: In a bowl, combine warm almond milk and maple syrup. Sprinkle in yeast and let it sit for about 5-10 minutes until frothy.
- Mix the Dough: In a large mixing bowl, combine flour, salt, and cinnamon. Pour in the yeast mixture and melted coconut oil. Stir until a dough forms.
- Knead the Dough: Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Place in a greased bowl, cover with a cloth, and let rise in a warm place for 1 hour, or until doubled in size.
- Prepare the Filling: In a small bowl, mix brown sugar, chopped pecans, and softened vegan butter until combined.
- Shape the Rolls: Roll out the dough into a rectangle about 1/4-inch thick. Spread the pecan filling evenly over the dough. Roll it tightly into a log and cut into 12 equal slices.
- Second Rise: Place the rolls in a greased baking dish, cover, and let rise for another 30 minutes.
- Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes until golden brown.
- Make the Glaze: In a small bowl, mix powdered sugar with 1-2 tablespoons of almond milk until smooth. Adjust consistency as needed.
- Serve: Drizzle the glaze over warm rolls and enjoy your delicious vegan maple pecan rolls.
