This vegan yogurt bark features a creamy yogurt base topped with an assortment of fresh fruits and crunchy granola. Simply freeze it, break into pieces, and enjoy a guilt-free treat. The recipe takes about 15 minutes to prepare and 3 hours to freeze, yielding about 12 pieces.

Ingredients

  • 2 cups dairy-free yogurt (coconut, almond, or soy)
  • 1 cup mixed fresh fruit (berries, banana slices, mango, etc.)
  • 1 cup granola
  • 2 tablespoons maple syrup or agave nectar (optional for sweetness)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Prepare the Base: In a mixing bowl, combine the dairy-free yogurt with maple syrup and vanilla extract (if using). Mix until smooth.
  2. Layer the Yogurt: Line a baking sheet with parchment paper. Pour the yogurt mixture onto the lined baking sheet and spread it evenly to about 1/2-inch thickness.
  3. Add Toppings: Scatter fresh fruits and granola evenly over the yogurt layer, gently pressing them in.
  4. Freeze: Place the baking sheet in the freezer and allow the yogurt bark to freeze for at least 3 hours or until completely solid.
  5. Cut and Serve: Once frozen, remove the bark from the freezer and let it sit for a few minutes. Break it into chunks using your hands or a sharp knife. Serve immediately or store in an airtight container in the freezer.
