Delicious Vegan Chocolate-Covered Pineapple

This recipe showcases juicy pineapple pieces coated in rich vegan chocolate, chilled until firm and featuring a gratifying crunch. Ideal for serving during gatherings or enjoying as a self-made dessert, it’s a simple yet elegant treat.
Ingredients
- 1 fresh pineapple, peeled, cored, and cut into bite-sized chunks
- 1 cup vegan dark chocolate chips
- 1 tablespoon coconut oil
- 1/4 cup chopped nuts or shredded coconut for garnish (optional)
Instructions
- Prepare the Pineapple: Cut the peeled and cored pineapple into bite-sized chunks and place them on a baking sheet lined with parchment paper.
- Melt the Chocolate: In a microwave-safe bowl, combine the vegan dark chocolate chips and coconut oil. Microwave in 30-second increments, stirring in between, until melted and smooth.
- Dip the Pineapple: Using a fork, dip each pineapple chunk into the melted chocolate, making sure to coat it completely. Allow excess chocolate to drip off before placing the chocolate-covered piece back on the parchment paper.
- Chill: Once all pineapple pieces are dipped, place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate has set.
- Serve: Once the chocolate is firm, sprinkle with chopped nuts or shredded coconut if desired, and serve chilled.
