I made this Vegan Chocolate Chunk Blondies for my dad’s holiday dinner last month. The chocolate stayed melty in the middle, and my nephew loved them.
Decadent Vegan Chocolate Chunk Blondies

These blondies feature a rich, fudgy texture that’s complemented by generous chunks of vegan chocolate. This quick recipe takes about 30 minutes from start to finish and yields a dozen blondies, making it an ideal sweet snack or dessert option.
Ingredients
- 1 cup smooth almond butter or cashew butter
- 1 cup brown sugar or coconut sugar
- 1/4 cup maple syrup or agave syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup vegan chocolate chunks or chips
- Optional: 1/2 cup chopped nuts for added texture
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Mix the Wet Ingredients: In a bowl, combine the almond butter, brown sugar, maple syrup, and vanilla extract. Mix until smooth and well blended.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
- Combine Mixtures: Gradually add the dry ingredients into the wet mixture, stirring until well combined. Fold in the vegan chocolate chunks and nuts if using.
- Bake: Pour the batter into the prepared baking pan and smooth the top. Bake for 20-25 minutes, until the edges are golden brown but the center is still slightly soft.
- Cool and Serve: Allow the blondies to cool in the pan for at least 10 minutes before lifting them out to cool completely on a wire rack. Cut into squares and enjoy!

I store the blondies in an airtight container at room temperature for up to three days, or in the fridge for up to five days. The stay melty, and I let blondies come to room temperature before serving.
