Soft Vegan Cinnamon Rolls With Gooey Swirls and Icing

I baked this Vegan Cinnamon Rolls for my book club last week. The cinnamon swirled gooey under the icing, and my mom loved them.

Fluffy Vegan Cinnamon Rolls Recipe

The vegan cinnamon rolls are incredibly soft and filled with gooey cinnamon-sugar swirls, making each bite indulgent and satisfying. This recipe takes about 1 hour and 30 minutes from start to finish and yields 12 generous rolls.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup bread flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened almond milk (warm)
  • 1/4 cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup vegan butter (softened)
  • 1 cup powdered sugar
  • 2 tablespoons almond milk (for icing)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: In a small bowl, combine warm almond milk, yeast, and a teaspoon of sugar. Let it sit for 5-10 minutes until frothy. In a larger bowl, mix together all-purpose flour, bread flour, sugar, and salt. Add the yeast mixture, vegetable oil, and apple cider vinegar, and knead until a soft dough forms.
  2. Rise the Dough: Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  3. Make the Filling: In a small bowl, mix together brown sugar and cinnamon. Once the dough has risen, roll it out into a rectangle on a floured surface. Spread softened vegan butter over the dough, then sprinkle the cinnamon sugar mixture evenly on top.
  4. Shape the Rolls: Roll the dough tightly from one end to the other, then slice into 12 equal pieces. Place them in a greased baking dish, cover, and let rise for another 30 minutes.
  5. Bake the Rolls: Preheat the oven to 350°F (175°C). Bake for 20-25 minutes, or until the rolls are lightly golden and cooked through.
  6. Prepare the Icing: While the rolls are baking, whisk together powdered sugar, almond milk, and vanilla extract until smooth.
  7. Finish and Serve: Drizzle the icing over warm rolls. Allow to cool slightly before serving.
