Fluffy Vegan Cinnamon Rolls Recipe

The vegan cinnamon rolls are incredibly soft and filled with gooey cinnamon-sugar swirls, making each bite indulgent and satisfying. This recipe takes about 1 hour and 30 minutes from start to finish and yields 12 generous rolls.
Ingredients
- 2 cups all-purpose flour
- 1 cup bread flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 teaspoon salt
- 1/2 cup unsweetened almond milk (warm)
- 1/4 cup vegetable oil
- 1 tablespoon apple cider vinegar
- 1/4 cup brown sugar
- 2 tablespoons ground cinnamon
- 1/4 cup vegan butter (softened)
- 1 cup powdered sugar
- 2 tablespoons almond milk (for icing)
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Dough: In a small bowl, combine warm almond milk, yeast, and a teaspoon of sugar. Let it sit for 5-10 minutes until frothy. In a larger bowl, mix together all-purpose flour, bread flour, sugar, and salt. Add the yeast mixture, vegetable oil, and apple cider vinegar, and knead until a soft dough forms.
- Rise the Dough: Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Make the Filling: In a small bowl, mix together brown sugar and cinnamon. Once the dough has risen, roll it out into a rectangle on a floured surface. Spread softened vegan butter over the dough, then sprinkle the cinnamon sugar mixture evenly on top.
- Shape the Rolls: Roll the dough tightly from one end to the other, then slice into 12 equal pieces. Place them in a greased baking dish, cover, and let rise for another 30 minutes.
- Bake the Rolls: Preheat the oven to 350°F (175°C). Bake for 20-25 minutes, or until the rolls are lightly golden and cooked through.
- Prepare the Icing: While the rolls are baking, whisk together powdered sugar, almond milk, and vanilla extract until smooth.
- Finish and Serve: Drizzle the icing over warm rolls. Allow to cool slightly before serving.
