These rich vegan frozen peanut butter bars feature a creamy peanut butter filling layered with a smooth chocolate topping. They are easy to prepare and require just a few simple ingredients. The recipe makes about 12 bars, perfect for sharing or for enjoying throughout the week.

Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup maple syrup or agave nectar
  • 1/4 cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup almond milk (or any non-dairy milk)
  • 1/2 cup dark chocolate chips (vegan)
  • Pinch of salt

Instructions

  1. Prepare the Base: In a large bowl, combine peanut butter, maple syrup, melted coconut oil, and vanilla extract. Mix until smooth.
  2. Add Oats: Stir in the rolled oats and a pinch of salt until well combined.
  3. Press into Pan: Line an 8×8 inch baking dish with parchment paper. Pour the peanut butter mixture into the dish, pressing it down evenly to form a base layer.
  4. Melt Chocolate: In a small saucepan over low heat, melt the dark chocolate chips with almond milk, stirring until smooth.
  5. Add Chocolate Layer: Pour the melted chocolate over the peanut butter base, spreading it evenly. Place in the freezer for at least 2 hours, or until firm.
  6. Slice and Serve: Once set, remove from the freezer, and let sit for a few minutes before slicing into bars. Serve chilled and enjoy!
