Decadent Vegan Chocolate Soufflé With a Soft Molten Center

I baked this Vegan Chocolate Soufflé for my book club last week. The chocolate rose with a soft center, and my friend loved it.

This vegan chocolate soufflé combines dark chocolate with aquafaba to create an airy and light texture while maintaining a rich flavor. The soufflé bakes to perfection in approximately 25 minutes, yielding a delightful dessert that serves 4.

Ingredients

  • 1 cup dark vegan chocolate (at least 70% cocoa), chopped
  • 1/4 cup almond milk or any plant-based milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup aquafaba (chickpea brine)
  • 1/4 teaspoon cream of tartar
  • 1/4 cup granulated sugar
  • 1 tablespoon cocoa powder for dusting the ramekins
  • Fresh berries or whipped coconut cream for serving (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease 4 ramekins with a little oil. Dust the insides with cocoa powder to prevent sticking.
  2. Melt the Chocolate: In a heatproof bowl, combine the chopped dark chocolate and almond milk. Melt over a double boiler or in the microwave, stirring until smooth. Stir in the vanilla extract and salt.
  3. Whip the Aquafaba: In a separate bowl, using an electric mixer, whip the aquafaba and cream of tartar until soft peaks form. Gradually add granulated sugar and continue to whip until stiff peaks form.
  4. Combine Mixtures: Gently fold a third of the whipped aquafaba into the melted chocolate mixture to lighten it. Gradually fold in the remaining aquafaba until there are no streaks, being careful not to deflate the mixture.
  5. Fill Ramekins: Spoon the soufflé mixture into the prepared ramekins, filling them just below the rim. Smooth the tops and run your finger around the edges to help them rise evenly.
  6. Bake: Place the ramekins on a baking sheet and bake for 20-25 minutes, or until the soufflés have risen and are firm at the edges but still slightly soft in the center.
  7. Serve: Remove from the oven, let cool for a minute, and serve immediately, optionally with fresh berries or whipped coconut cream.
