This recipe features creamy chocolate truffles filled with a burst of cherry flavor, creating a perfect balance of sweetness and tartness. The truffles take about 30 minutes to prepare and yield approximately 12 servings.

Ingredients

  • 1 cup pitted cherries, fresh or frozen
  • 1 cup dairy-free dark chocolate chips
  • 1/4 cup coconut cream
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder, for rolling
  • Pinch of salt

Instructions

  1. Prepare the Cherries: If using frozen cherries, thaw and drain excess liquid. Blend the cherries in a food processor until smooth.
  2. Melt the Chocolate: In a double boiler or microwave, melt the dark chocolate chips until smooth. Stir in the coconut cream, maple syrup, vanilla extract, and salt until fully combined.
  3. Mix in Cherry Puree: Fold the cherry puree into the chocolate mixture until combined, then refrigerate for about 15-20 minutes until it thickens slightly.
  4. Form the Truffles: Use a small scoop or spoon to portion out the mixture, rolling it into balls with your hands. If the mixture is too sticky, refrigerate it for a bit longer.
  5. Coat the Truffles: Roll each truffle in cocoa powder until fully coated, then place them on a parchment-lined baking sheet.
  6. Chill and Serve: Refrigerate the truffles for at least an hour to firm up before serving. Enjoy them cold or at room temperature.
