Ingredients
- 1 ½ cups pitted dates
- 1 cup crushed vegan chocolate cookies
- 1 cup raw cashews, soaked for 4 hours and drained
- ½ cup coconut cream
- ¼ cup maple syrup
- 2 teaspoons vanilla extract
- ⅓ cup crushed vegan chocolate cookies (for topping)
- A pinch of salt
Instructions
- Prepare the Crust: In a food processor, blend the pitted dates and crushed vegan chocolate cookies until mixture resembles coarse crumbs. Press the mixture firmly into the bottom of a springform pan to form the crust.
