These vegan peppermint patties feature a creamy mint filling encased in a crisp chocolate shell. The recipe usually takes about an hour to prepare and chill, making approximately 12 patties.

Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/4 cup coconut oil, melted
  • 1/2 cup pure maple syrup
  • 1 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips (dairy-free)
  • 1 tablespoon coconut oil (for melting with chocolate)

Instructions

  1. Prepare the Filling: In a bowl, combine shredded coconut, melted coconut oil, maple syrup, peppermint extract, and salt. Mix until well blended.
  2. Shape the Patties: Scoop out tablespoon-sized portions of the mixture and form them into flat patties. Place them on a parchment-lined baking sheet.
  3. Chill the Patties: Refrigerate the patties for about 30 minutes, or until they are firm.
  4. Melt the Chocolate: In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until fully melted.
  5. Coat the Patties: Dip each peppermint patty into the melted chocolate, ensuring they are fully coated. Use a fork to lift them out and let the excess chocolate drip before placing them back on the parchment paper.
  6. Chill Again: Return the coated patties to the refrigerator for about 15-20 minutes until the chocolate shell is set.
