Colorful Vegan Fruit Pizza With a Soft Sugar Cookie Crust

This colorful fruit pizza consists of a soft and chewy sugar cookie crust that serves as the perfect base for a rainbow of fresh fruits. The pizza takes about 25 minutes to prepare and serves 8 people, making it an excellent choice for sharing.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup vegan cream cheese or cashew yogurt
  • 2 cups mixed fresh fruits (such as strawberries, blueberries, kiwi, and banana)
  • Optional: Shredded coconut or chopped nuts for topping

Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking powder, and salt. In a separate bowl, mix the melted coconut oil, maple syrup, and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  2. Shape and Bake: Press the dough into a greased 9-inch round pizza pan or on a parchment-lined baking sheet. Bake for 10-12 minutes or until golden and set. Allow the crust to cool completely.
  3. Prepare the Topping: While the crust cools, beat the vegan cream cheese or cashew yogurt with a little maple syrup if desired, to sweeten. Spread it evenly over the cooled sugar cookie crust.
  4. Assemble the Pizza: Arrange the mixed fresh fruits on top of the cream cheese layer in a colorful pattern. If desired, sprinkle shredded coconut or chopped nuts on top for added texture.
  5. Serve: Slice the fruit pizza into wedges and serve immediately or refrigerate until ready to serve.
