I baked this Vegan Cashew Bark for my friend’s dinner party last weekend. The cashews made it buttery under the chocolate, and my sister liked it.
Delicious Vegan Cashew Bark with Chocolate

This buttery vegan cashew bark features layers of smooth chocolate infused with cashew butter for a creamy consistency. The recipe takes about 1 hour to set and yields approximately 12 pieces.
Ingredients
- 1 cup raw cashews, soaked for 2-4 hours and drained
- 1/4 cup maple syrup or agave syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips or vegan chocolate
- Sea salt for sprinkling (optional)
- Toppings: chopped nuts, dried fruits, or coconut flakes (optional)
Instructions
- Blend the Cashew Mixture: In a blender or food processor, combine soaked cashews, maple syrup, melted coconut oil, and vanilla extract. Blend until smooth and creamy.
- Prepare the Bark Base: Line a baking sheet or dish with parchment paper. Spread the cashew mixture evenly across the bottom.
- Melt the Chocolate: In a microwave or double boiler, melt the dark chocolate chips until smooth and fully melted.
- Layer the Chocolate: Pour the melted chocolate over the cashew base and spread it evenly. Use a spatula to create a smooth layer.
- Add Toppings: If desired, sprinkle salt and any additional toppings over the chocolate layer.
- Set the Bark: Place the baking sheet in the fridge for about 30-60 minutes, or until firm. Once set, break the bark into pieces and serve.
