Decadent Vegan Pralines Recipe

This recipe for vegan pralines combines the nutty essence of pecans with a creamy caramel base, creating a satisfying texture and flavor. It takes approximately 30 minutes to prepare and makes about 12 pralines.
Ingredients
- 1 cup pecans, chopped
- 1 cup full-fat coconut milk
- 2 cups brown sugar, packed
- 1/4 cup vegan butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
Instructions
- Prepare the Baking Sheet: Line a baking sheet with parchment paper and set aside.
- Toast the Pecans: In a dry skillet over medium heat, toast the chopped pecans until fragrant, about 5 minutes. Remove from heat and let cool.
- Create the Caramel: In a saucepan, combine the coconut milk, brown sugar, vegan butter, and salt. Cook over medium heat, stirring constantly until the mixture comes to a boil.
- Simmer the Mixture: Continue cooking for about 7-10 minutes, or until the mixture thickens slightly. Remove from heat and stir in the vanilla extract and baking soda.
- Incorporate the Pecans: Fold the toasted pecans into the caramel mixture until fully coated.
- Shape the Pralines: Using a spoon, drop clusters of the pecan-caramel mixture onto the prepared baking sheet. Allow to cool completely and set before serving.
