Sweet Cinnamon Coated Vegan Candied Pecans

These vegan candied pecans feature a crisp coating of sugar and cinnamon that enhances their natural nuttiness. The recipe takes about 30 minutes from start to finish and yields approximately 2 cups of candied pecans.
Ingredients
- 2 cups pecan halves
- 1 cup maple syrup or agave syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon coconut oil (optional for coating)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the Mixture: In a large mixing bowl, combine the maple syrup, ground cinnamon, vanilla extract, and salt. Stir until well mixed.
- Coat the Pecans: Add the pecan halves to the bowl, and toss them in the syrup mixture until they are fully coated. If using coconut oil, melt it and add it to the mixture before coating.
- Bake the Pecans: Spread the coated pecans in a single layer on the prepared baking sheet. Bake for 15-20 minutes, stirring halfway through, until the pecans are golden and the coating is bubbly.
- Cool: Remove the baking sheet from the oven and let the candied pecans cool completely on the sheet. They will harden as they cool.
