Soft Vegan Raspberry Sweet Rolls With a Jammy Swirl

Fluffy Vegan Raspberry Sweet Rolls

These sweet rolls are enveloped in a rich, vegan dough and generously swirled with tart raspberry jam. The rolls are baked until golden brown and are perfect for serving at brunch or enjoying as a sweet snack any time of the day. This recipe yields 12 rolls and takes about 2 hours to prepare and bake.

Ingredients

  • 2 cups all-purpose flour, plus more for dusting
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons instant yeast
  • 1/2 teaspoon salt
  • 1/4 cup almond milk (or any plant-based milk), warmed
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 1 tablespoon lemon juice (optional, for added brightness)
  • Powdered sugar for dusting (optional)

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, combine 2 cups of flour, sugar, instant yeast, and salt.
  2. Combine Wet Ingredients: In a separate bowl, mix the warmed almond milk, vegetable oil, and vanilla extract.
  3. Form the Dough: Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. First Rise: Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Shape the Rolls: Once risen, roll out the dough on a floured surface into a rectangle (about 12×16 inches). Spread the raspberry jam evenly over the dough, leaving a small border around the edges.
  6. Roll and Slice: Starting from one long side, carefully roll the dough into a log. Cut the roll into 12 equal pieces.
  7. Second Rise: Arrange the rolls in a greased baking dish. Cover and let them rise for an additional 30 minutes.
  8. Bake the Rolls: Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until golden brown.
  9. Cool and Serve: Allow the rolls to cool for a few minutes, then dust with powdered sugar if desired and serve warm.
