Easy Vegan Strawberry Bites for Summer

This recipe features whole strawberries filled with a creamy vegan mixture, then frozen to create bite-sized delights. The preparation takes only about 20 minutes, plus freezing time, and can be whipped up to serve as a healthy treat for friends and family.
Ingredients
- 1 pound fresh strawberries, hulled
- 1 cup coconut yogurt or any vegan yogurt
- 2 tablespoons maple syrup or agave nectar
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional toppings: crushed nuts, shredded coconut or dairy-free chocolate chips
Instructions
- Prep the Strawberries: Hull the fresh strawberries carefully and set them aside.
- Make the Filling: In a bowl, mix together the coconut yogurt, maple syrup, vanilla extract, and a pinch of salt until smooth and creamy.
- Fill the Strawberries: Using a small spoon or piping bag, fill each strawberry with the creamy yogurt mixture.
- Freeze: Place the filled strawberries on a parchment-lined baking sheet. Freeze for at least 2 hours until solid.
- Serve: Once frozen, remove from the freezer and enjoy the refreshing strawberry bites as a perfect summer treat. Optionally, roll them in crushed nuts or coconut before serving.
