Cool Vegan Mint Chocolate Truffles With a Creamy Center

I baked this Vegan Mint Chocolate Truffles for my friend’s dinner party last weekend. The mint made them cool and creamy, and my friend liked them.

Delicious Vegan Mint Chocolate Truffles Recipe

An inviting platter of vegan mint chocolate truffles rolled in cocoa powder, garnished with fresh mint leaves.

These truffles are made from a blend of premium cocoa powder, coconut cream, and fresh mint, creating a smooth and decadent center. They are rolled in a mixture of cocoa powder and crushed dark chocolate for a rich finish. The recipe yields about 12 truffles and is quick to prepare, taking roughly 30 minutes.

Ingredients

  • 1 cup full-fat coconut cream
  • 2 cups dark chocolate chips (vegan)
  • 2 teaspoons peppermint extract
  • 1/4 teaspoon sea salt
  • 1/2 cup cocoa powder for rolling
  • 1/4 cup crushed dark chocolate for rolling (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in intervals of 30 seconds, stirring until smooth.
  2. Combine Ingredients: In a mixing bowl, combine melted chocolate with coconut cream, peppermint extract, and sea salt. Stir until well combined and the mixture is smooth.
  3. Chill the Mixture: Refrigerate the chocolate mixture for about 20-30 minutes or until it is firm enough to shape.
  4. Form the Truffles: Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands.
  5. Coat the Truffles: Roll each truffle in cocoa powder and crushed dark chocolate (if using) until fully coated.
  6. Chill Again: Place the truffles on a baking sheet and refrigerate for an additional 15 minutes to set.
  7. Serve: Garnish with fresh mint leaves if desired, and enjoy your creamy vegan mint chocolate truffles!
