These macaroons are light and chewy, infused with zesty lemon juice and zest. The recipe takes about 25 minutes from start to finish and serves approximately 12 cookies.

Ingredients

  • 2 cups shredded unsweetened coconut
  • 1/2 cup almond flour
  • 1/3 cup maple syrup
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, combine the shredded coconut, almond flour, baking powder, and salt.
  3. Combine Wet Ingredients: In another bowl, mix together the maple syrup, fresh lemon juice, lemon zest, and vanilla extract until well combined.
  4. Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until fully incorporated.
  5. Form the Macaroons: Using your hands or a cookie scoop, form the mixture into small balls and place them on the prepared baking sheet, spacing them about an inch apart.
  6. Bake: Bake in the preheated oven for 15-18 minutes, or until the edges are golden brown.
  7. Cool: Allow the macaroons to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Optional: Dust with powdered sugar before serving.
