Delicious Vegan Maple Blondies

These vegan maple blondies boast a rich, fudgy texture infused with the warm flavors of maple syrup and vanilla. The recipe yields about 12 blondies and takes approximately 30 minutes from start to finish.
Ingredients
- 1 cup almond butter or peanut butter
- 1/2 cup maple syrup
- 1/4 cup coconut sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegan chocolate chips (optional)
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Mix Wet Ingredients: In a mixing bowl, combine almond or peanut butter, maple syrup, coconut sugar, and vanilla extract until smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
- Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until fully combined. If desired, fold in chocolate chips and nuts.
- Bake: Spread the batter evenly in the prepared baking pan. Bake for about 20-25 minutes, or until a toothpick comes out mostly clean.
- Cool and Serve: Let the blondies cool in the pan for at least 10 minutes before cutting into squares. Enjoy them warm or at room temperature.
