- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1/2 cup almond milk or other plant-based milk
- 1/4 cup unsweetened applesauce
- 1/4 cup coconut oil melted
- 2 teaspoons vanilla extract
- 1 vanilla bean (seeds scraped)
- 1 cup powdered sugar for icing
- 2-3 tablespoons almond milk for icing
- Sprinkles for decoration (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, mix the almond milk, applesauce, melted coconut oil, vanilla extract, and vanilla bean seeds until well combined.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Fill Donut Pan: Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake: Bake for 10-12 minutes, or until a toothpick inserted into a donut comes out clean. Let cool in the pan for a few minutes before transferring them to a wire rack.
- Prepare Icing: In a small bowl, whisk together powdered sugar and almond milk until smooth and desired consistency is reached.
- Ice the Donuts: Once the donuts are cool, dip the tops into the icing and decorate with sprinkles if desired.
