Ingredients

  • 1 1/2 cups graham cracker crumbs or vegan cookie crumbs
  • 1/4 cup coconut oil melted
  • 1/4 cup maple syrup or agave nectar
  • 2 cups almond milk or other plant-based milk
  • 1/2 cup coconut cream
  • 1/3 cup cornstarch
  • 1/2 cup sugar or coconut sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon turmeric powder for color (optional)
  • 3 ripe bananas sliced
  • Additional banana slices and coconut whipped cream for topping (optional)

Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted coconut oil, and maple syrup. Press the mixture into a 9-inch pie pan evenly across the bottom and up the sides. Bake for 8-10 minutes, then cool completely.
  2. Make the Pudding: In a saucepan, whisk together almond milk, coconut cream, cornstarch, sugar, vanilla extract, and turmeric powder (if using). Cook over medium heat, stirring constantly until the mixture thickens and begins to bubble.
  3. Layer the Pie: Remove the pudding from heat and let it cool slightly. Slice two bananas and layer them on the cooled crust. Pour half of the pudding mixture over the bananas, followed by the remaining bananas and then the rest of the pudding.
  4. Chill: Cover the pie and refrigerate for at least 4 hours, or overnight, until set.
