These vegan cheesecake bites feature a creamy cashew-based filling, perfectly balanced with a layer of rich dark chocolate. The recipe takes about 25 minutes to prepare and requires chilling time, making it easy to whip up a batch in advance for gatherings or special occasions.

Ingredients

  • 1 cup raw cashews soaked for 4 hours and drained
  • 1/4 cup maple syrup
  • 1/4 cup coconut cream
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips dairy-free
  • 1 tablespoon coconut oil
  • Pinch of salt
  • Cocoa powder or crushed nuts for garnish (optional)

Instructions

  1. Blend the Filling: In a high-speed blender or food processor, combine the soaked cashews, maple syrup, coconut cream, lemon juice, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
  2. Form the Bites: Line a baking sheet with parchment paper. Using a small cookie scoop or your hands, form small balls from the cheesecake mixture and place them on the prepared baking sheet.
  3. Freeze: Place the baking sheet in the freezer for about 1-2 hours or until the cheesecake bites are firm.
  4. Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Melt in the microwave in 30-second intervals, stirring in between until smooth.
  5. Dip the Bites: Remove the cheesecake bites from the freezer. Dip each one into the melted chocolate, making sure to coat them evenly. Return to the parchment-lined baking sheet.
  6. Garnish and Chill: If desired, sprinkle cocoa powder or crushed nuts on top of the chocolate before it sets. Place the bites back in the freezer for about 15 minutes to allow the chocolate to harden.
