These cashew blondies are a perfect counterpart to traditional brownies, offering a chewy texture and irresistible nutty flavor. Made with wholesome ingredients, this recipe takes about 30 minutes from start to finish and yields a batch of 12 blondies.
Ingredients
- 1 cup cashew butter
- 1/2 cup maple syrup
- 1/4 cup coconut sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup almond flour
- 1/2 cup chocolate chips or chopped nuts (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a square baking dish (8×8 inches) with parchment paper.
- Mix Wet Ingredients: In a large bowl, combine cashew butter, maple syrup, coconut sugar, and vanilla extract. Mix until smooth.
- Add Dry Ingredients: Stir in baking soda, salt, and almond flour until well combined. If desired, fold in chocolate chips or nuts.
- Bake: Pour the batter into the prepared baking dish and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the blondies to cool in the pan for at least 10 minutes before transferring to a wire rack. Once cooled, cut into squares and enjoy!
