The bars consist of a sweet crumbly topping that complements the tartness of fresh raspberries. This straightforward recipe takes about 45 minutes from start to finish and yields 9 bars, making it an ideal option for sharing or meal prep.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup rolled oats
  • ½ cup coconut sugar or brown sugar
  • ¼ teaspoon salt
  • ½(or frozen, thawed)
  • 2 tablespoons maple syrup (for the raspberry filling)
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. Make the Crumble Mixture: In a mixing bowl, combine the flour, rolled oats, coconut sugar, and salt. Add the melted coconut oil and vanilla extract, mixing until the dough forms coarse crumbs.
  3. Press the Base: Take about two-thirds of the crumble mixture and press it firmly into the bottom of the prepared baking pan.
  4. Prepare the Raspberry Filling: In another bowl, combine the raspberries, maple syrup, and cornstarch (if using). Gently mix until combined, then pour the raspberry mixture over the pressed crust.
  5. Top with Remaining Crumble: Sprinkle the reserved crumble mixture evenly over the raspberry filling.
