Chewy Vegan Chocolate Chip Blondies With Golden Edges

I made these vegan chocolate chip blondies for my family’s movie night last weekend. The chocolate chips made the blondies chewy, and my dad said they were the best blondies he had ever had.

These vegan chocolate chip blondies are a scrumptious dessert featuring a moist and chewy texture with golden edges. The recipe takes about 30 minutes from start to finish and yields approximately 16 squares.

Ingredients

  • 1 cup almond butter or peanut butter
  • 1/2 cup maple syrup or agave nectar
  • 1/4 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup rolled oats
  • 1/2 cup dairy-free chocolate chips
  • 1/4 cup chopped nuts optional

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the almond or peanut butter, maple syrup, coconut sugar, and vanilla extract. Stir until smooth.
  3. Combine Dry Ingredients: Add baking soda and salt to the wet mixture and mix well. Then stir in the rolled oats until fully incorporated.
  4. Add Chocolate Chips: Fold in the dairy-free chocolate chips and nuts if using.
  5. Transfer to Baking Dish: Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake: Bake for 20-25 minutes or until the edges are golden and a toothpick inserted into the center comes out mostly clean.
  7. Cool and Serve: Allow the blondies to cool in the pan for 10 minutes before lifting them out using the parchment paper. Cut into squares and enjoy!
