Bold Vegan Espresso Brownies for Coffee and Chocolate Lovers

I made these vegan espresso brownies for my book club last week. The espresso made the brownies bold, and three people asked for the recipe before the meeting ended.

These brownies are dense and fudgy, featuring a hint of espresso that elevates the chocolate flavor. With easy-to-follow steps, they come together quickly and make for a delightful vegan dessert that can be enjoyed by all.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup brown sugar
  • 1/2 cup coconut oil melted
  • 1/4 cup brewed espresso or strong coffee
  • 1/4 cup almond milk or any plant-based milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegan chocolate chips optional
  • Powdered sugar for dusting optional

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or line it with parchment paper for easy removal.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
  3. Combine Wet Ingredients: In another bowl, mix the melted coconut oil, brown sugar, espresso, almond milk, and vanilla extract until smooth.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the vegan chocolate chips.
  5. Bake: Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes until a toothpick inserted comes out with a few moist crumbs.
  6. Cool and Serve: Allow the brownies to cool in the pan for at least 10 minutes before transferring them to a cutting board. Cut into squares and dust with powdered sugar if desired.
