This Vegan Yule Log features a moist chocolate sponge cake rolled with creamy chocolate frosting, creating a beautiful log effect. The recipe takes approximately 1 hour to prepare and serves 8 people.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup almond milk or other plant-based milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips
  • 1 cup vegan butter softened
  • 2 cups powdered sugar
  • 1/4 cup cocoa powder for frosting
  • 1 teaspoon vanilla extract for frosting
  • Vegan chocolate shavings or berries for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add Wet Ingredients: Stir in the almond milk, vegetable oil, and vanilla extract until well combined.
  4. Bake the Cake: Pour the batter onto the prepared baking sheet spreading it evenly. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  5. Cool and Roll: Once baked, let the cake cool in the pan for 10 minutes. Carefully flip it onto a clean kitchen towel dusted with powdered sugar and peel off the parchment. Roll the cake gently along with the towel and let it cool completely.
  6. Prepare the Frosting: In a mixing bowl, beat the softened vegan butter, powdered sugar, cocoa powder, and vanilla extract until smooth and creamy.
  7. Assemble the Yule Log: Unroll the cooled cake and spread a generous layer of frosting evenly over the surface. Roll the cake back up tightly without the towel and place it seam side down on a serving platter.
  8. Frost the Log: Use the remaining frosting to cover the outside of the log. Create a bark effect with a fork and decorate with chocolate shavings or berries if desired.
  9. Serve: Slice and serve your Vegan Yule Log, perfect for holiday gatherings or special occasions.
