Decadent Vegan Molten Peanut Butter Cake With a Creamy Center

I made this Vegan Molten Peanut Butter Cake for my family’s Sunday brunch last month. The peanut butter stayed creamy in the middle, and my coworker loved it.

This cake features a fudgy chocolate shell that encases a molten peanut butter center. Ready in just about 30 minutes, it serves 4-6 people and is ideal for special occasions or a delightful everyday indulgence.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup powdered sugar
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup almond milk or any plant-based milk
  • 1/3 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup creamy peanut butter
  • 1/4 cup dark chocolate chips (vegan)
  • Extra cocoa powder for dusting

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin or individual ramekins with oil and dust with cocoa powder.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, powdered sugar, cocoa powder, baking powder, and salt until well blended.
  3. Combine Wet Ingredients: In another bowl, mix together the almond milk, vegetable oil, and vanilla extract.
  4. Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing.
  5. Assemble the Cakes: Spoon half of the cake batter into the prepared muffin tin or ramekins. Then, drop about a tablespoon of peanut butter into the center of each. Top with the remaining cake batter, covering the peanut butter.
  6. Bake: Bake for 12-15 minutes, until the edges are firm but the center is still soft. Do not overbake, as we want the molten center.
  7. Cool Slightly: Allow the cakes to cool for a minute before carefully inverting them onto plates.
  8. Serve: Serve warm with a dusting of powdered sugar or a scoop of vegan ice cream for added decadence.
