I made this Vegan Coconut Brittle for my coworker’s going-away party last month. The coconut stayed crisp and caramelized, and my niece liked it.
With just a few simple ingredients, you can create a delightful candy that’s perfect for parties or as a snack. Enjoy the chewy coconut combined with the sweetness of sugar, making it a great option for any occasion.
Crunchy Coconut Brittle Recipe

This coconut brittle combines shredded coconut with sugar and a touch of vanilla, cooked until it reaches a hard candy consistency. The process takes about 30 minutes from start to finish and yields approximately 12 servings.
Ingredients
- 2 cups shredded coconut, unsweetened
- 1 cup sugar
- 1/4 cup light corn syrup
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Oil for greasing the baking sheet
Instructions
- Prepare the Baking Sheet: Grease a baking sheet with oil or line it with parchment paper for easy removal.
- Cook the Sugar Mixture: In a medium saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring until the sugar dissolves. Bring the mixture to a boil without stirring and let it cook until it reaches a light amber color (about 10-12 minutes).
- Add Coconut and Flavor: Remove from heat, and quickly stir in the shredded coconut, vanilla extract, and salt until everything is well-coated.
- Spread the Mixture: Immediately pour the mixture onto the prepared baking sheet, spreading it out evenly with a spatula.
- Cool and Break: Allow the brittle to cool for about 30 minutes until it hardens. Once cooled, break it into pieces.
