  • 2 tablespoons granulated sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup almond milk or any plant-based milk, warmed
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup vegan butter, softened

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, granulated sugar, yeast, and salt. Mix well.
  2. Add Wet Ingredients: Pour in the warm almond milk, melted coconut oil, and vanilla extract. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  3. First Rise: Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Make the Filling: In a small bowl, combine brown sugar and ground cinnamon. Set aside.
  5. Shape the Babka: Once the dough has risen, roll it out on a floured surface into a rectangle, about 1/4 inch thick. Spread vegan butter over the dough, then sprinkle the cinnamon-sugar mixture evenly on top.
