Irresistible Vegan Churro Blondies Rolled in Cinnamon Sugar

These blondies have a soft, gooey center with a slightly crisp edge, providing the perfect handheld treat. The recipe yields about 12 blondies and takes around 40 minutes to prepare and bake.

Ingredients

  • 1 cup almond butter or other nut butter
  • 1 cup brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup plant-based milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar for rolling
  • 1 tablespoon ground cinnamon for rolling

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan or line it with parchment paper.
  2. Mix Wet Ingredients: In a mixing bowl, combine the almond butter, brown sugar, maple syrup, plant-based milk, and vanilla extract. Mix until smooth and fully combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined and no flour pockets remain.
  5. Prepare for Baking: Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake Blondies: Bake for 25-30 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
  7. Cool and Prepare Sugar: Once baked, let the blondies cool in the pan for about 10 minutes. While they cool, mix the granulated sugar and ground cinnamon in a small bowl.
  8. Roll in Cinnamon Sugar: Once cool enough to handle, cut the blondies into squares and roll each piece in the cinnamon sugar mixture until fully coated.
