Refreshing Strawberry Popsicles Recipe

The popsicles are crafted from pureed strawberries mixed with a touch of lemon juice for brightness and sweetness. This recipe yields approximately 6 popsicles and takes about 10 minutes to prepare before freezing.
Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 2 tablespoons maple syrup or agave nectar (adjust to taste)
- 1 tablespoon lemon juice
- 1 cup coconut water or almond milk (optional for creaminess)
- Fresh strawberry slices for garnish (optional)
Instructions
- Prepare the Strawberries: In a blender, combine the sliced strawberries, maple syrup, and lemon juice. Blend until smooth.
- Add Creaminess: If desired, add coconut water or almond milk to the blended mixture for a creamier texture and blend again until combined.
- Fill Popsicle Molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert Sticks: Place the popsicle sticks in the molds and freeze for at least 4-6 hours, or until solid.
- Unmold and Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds and gently pull the popsicles out. Serve immediately or store in an airtight container in the freezer.
