Five-Minute Vegan Mug Brownie With a Warm Fudgy Center

I baked this Vegan Mug Brownie for my book club last week. It cooked in five minutes with a fudgy center, and my nephew loved it.

This vegan mug brownie features a tender and gooey center, delivering a delightful chocolate experience in just a few minutes. It serves one and is perfect for when you need a quick treat without the hassle of baking a whole batch.

Ingredients

  • 2 tablespoons all-purpose flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons brown sugar or coconut sugar
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons almond milk or any plant-based milk
  • 1 tablespoon vegetable oil or melted coconut oil
  • 1/4 teaspoon vanilla extract
  • Vegan chocolate chips optional

Instructions

  1. Mix Dry Ingredients: In a microwave-safe mug, combine the flour, cocoa powder, brown sugar, baking powder, and salt. Stir until well combined.
  2. Add Wet Ingredients: Pour in the almond milk, oil, and vanilla extract. Mix until smooth and no dry ingredients remain. If desired, stir in vegan chocolate chips for extra fudginess.
  3. Microwave: Place the mug in the microwave and cook on high for about 30-40 seconds. Start with 30 seconds and check for doneness; the brownie should be set but still moist in the center.
  4. Cool Slightly: Allow to cool for a minute before enjoying your warm fudgy brownie straight from the mug.
