This vegan lemon mousse combines silken tofu, lemon juice, and maple syrup, resulting in a creamy and decadent treat. The recipe takes about 20 minutes to prepare and can be chilled in the fridge until you’re ready to serve, making it a convenient option for gatherings or after dinner.

Ingredients

  • 1 package (12 oz) silken tofu, drained
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Fresh berries or mint leaves for garnish (optional)

Instructions

  1. Blend the Base: In a food processor, combine the silken tofu, lemon juice, lemon zest, maple syrup, vanilla extract, and pinch of salt. Blend until smooth and creamy.
  2. Taste and Adjust: Taste the mixture and adjust the sweetness or acidity by adding more maple syrup or lemon juice as desired.
  3. Chill: Spoon the mousse into serving bowls or glasses and refrigerate for at least 1-2 hours to allow it to firm up.
