Melt-in-Your-Mouth Vegan Tres Leches Cake

This tres leches cake is made with a light and fluffy vegan sponge soaked in a blend of plant-based milk, creating the signature moist texture. The recipe can be prepared in about 1.5 hours and serves approximately 10 people.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup almond milk (or other plant-based milk)
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 tablespoon apple cider vinegar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 can (13.5 oz) coconut milk, full-fat
- 1 cup almond milk (for soaking)
- 1/2 cup sweetened condensed coconut milk
- 1/2 cup coconut whipped cream for topping
- Cinnamon for dusting (optional)
- Fresh fruit for garnish (optional)
Instructions
- Prepare the Cake: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together almond milk, melted coconut oil, vanilla extract, and apple cider vinegar.
- Mix and Bake: Pour the wet ingredients into the dry ingredients and mix until well combined. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Soak: Allow the cake to cool completely in the pan. In a mixing bowl, combine coconut milk, almond milk, and sweetened condensed coconut milk. Poke holes into the cooled cake using a fork and pour the milk mixture evenly over the cake. Let it soak in the fridge for at least 2 hours, preferably overnight.
- Serve: Before serving, top with coconut whipped cream and dust with cinnamon if desired. Garnish with fresh fruit for added flavor and presentation.
