- 2 cups cooked and mashed sweet potatoes (about 2 medium sweet potatoes)
- 1 cup coconut milk or any non-dairy milk
- 3/4 cup brown sugar or maple syrup
- 1/4 cup melted coconut oil or vegan butter
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 pre-made vegan pie crust
Instructions
- Prepare Sweet Potatoes: Start by boiling or roasting the sweet potatoes until tender. Allow them to cool, then peel and mash them until smooth.
