Easy Vegan Apple Cinnamon Rolls Recipe

- 1/4 cup raisins or walnuts optional
- Powdered sugar for icing optional
Instructions
- Prepare the Dough: In a bowl, combine warm almond milk and coconut sugar. Sprinkle yeast on top and let it sit for 5-10 minutes until bubbly. Stir in melted coconut oil, vanilla extract, and salt.
- Mix the Ingredients: Gradually add in flour, mixing until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes.
- Let it Rise: Place the kneaded dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm area for about 30 minutes.
- Prepare the Filling: In a separate bowl, mix diced apples with brown sugar, cinnamon, and lemon juice. Stir in raisins or walnuts if using.
- Shape the Rolls: Roll out the dough on a floured surface into a rectangle. Spread the apple filling evenly across the dough. Roll the dough tightly into a log and slice into 12 equal pieces.
- Bake: Place the rolls in a greased baking dish. Let them rise again for 15-20 minutes. Preheat the oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
- Cool and Serve: Allow the rolls to cool slightly. Top with powdered sugar if desired before serving.
