Ingredients

  • 1 cup vegan butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup fruit jam of choice (e.g., raspberry, apricot, or strawberry)
  • 1 tablespoon almond or plant-based milk (optional, for moisture)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the Butter and Sugar: In a mixing bowl, beat the softened vegan butter and powdered sugar together until light and fluffy. Stir in the vanilla extract.
  3. Mix the Dry Ingredients: In another bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until combined. If needed, add almond milk for moisture.
  4. Shape the Cookies: Scoop about a tablespoon of dough and roll it into a ball. Place it on the prepared baking sheet and flatten it slightly. Use your thumb to create a small indent in the center.
  5. Fill with Jam: Spoon a small amount of fruit jam into the indent of each cookie.
  6. Bake: Bake the cookies for 12-15 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
