I baked this Vegan Apple Turnovers for my book club last week. The apples stayed warm with cinnamon inside, and my dad loved them.
Delicious Vegan Apple Turnovers

These apple turnovers are filled with a mixture of tender apples and fragrant cinnamon baked in a golden, flaky crust. They’re a perfect treat for dessert or a snack, requiring about 45 minutes to prepare and bake, yielding 8 turnovers.
Ingredients
- 2 large apples, peeled, cored, and diced
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 sheet of vegan puff pastry, thawed
- 1 tablespoon almond milk or plant-based milk
- Powdered sugar for dusting (optional)
Instructions
- Prepare the Filling: In a mixing bowl, combine the diced apples, brown sugar, cinnamon, and lemon juice. Stir until the apples are evenly coated.
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll Out the Pastry: On a lightly floured surface, roll out the vegan puff pastry until slightly thinner. Cut into squares or triangles, depending on your desired shape.
- Fill the Turnovers: Place a tablespoon of the apple filling in the center of each pastry piece. Fold the pastry over to create a triangle and seal the edges by pressing with a fork.
- Brush with Milk: Place the turnovers on the prepared baking sheet. Brush the tops with almond milk for a nice golden color.
- Bake: Bake in the preheated oven for 20-25 minutes, or until golden brown. Let them cool slightly before serving.
- Serve: Dust with powdered sugar if desired and enjoy warm.

I store the turnovers in an airtight container at room temperature for up to two days. The stay flaky, and I warm gently before serving.
