This vegan lemon mousse combines silken tofu, lemon juice, and maple syrup, resulting in a creamy and decadent treat. The recipe takes about 20 minutes to prepare and can be chilled in the fridge until you’re ready to serve, making it a convenient option for gatherings or after dinner.
Ingredients
- 1 package (12 oz) silken tofu, drained
- 1/3 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup maple syrup or agave nectar
- 1 teaspoon vanilla extract
- Pinch of salt
- Fresh berries or mint leaves for garnish (optional)
Instructions
- Blend the Base: In a food processor, combine the silken tofu, lemon juice, lemon zest, maple syrup, vanilla extract, and pinch of salt. Blend until smooth and creamy.
- Taste and Adjust: Taste the mixture and adjust the sweetness or acidity by adding more maple syrup or lemon juice as desired.
