This Vegan Coconut Tart features a buttery crust filled with a luscious coconut cream mixture that is both smooth and refreshing. The recipe takes about 1 hour to prepare and serves 8 people, making it ideal for sharing with family and friends.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup coconut oil melted
  • ¼ cup powdered sugar
  • ¼ teaspoon salt
  • 1 can (14 ounces) full-fat coconut milk
  • ½ cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • ½ cup shredded coconut for garnish
  • Fresh fruit (like mango or pineapple) for serving (optional)

Instructions

  1. Prepare the Tart Crust: In a mixing bowl, combine the flour, melted coconut oil, powdered sugar, and salt. Mix until a dough forms. Press the dough evenly into a tart pan and prick the bottom with a fork. Chill in the refrigerator for 30 minutes.
