Delicious Vegan Cranberry Bars Recipe

These cranberry bars feature a delectable layer of tart cranberries sweetened perfectly, sandwiched in an oat-based crust. The recipe requires only about an hour from start to finish and yields 12 generous bars.
Ingredients
- 2 cups fresh or frozen cranberries, rinsed
- 1 cup sugar, divided
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup coconut oil, melted
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Prepare the Cranberry Filling: In a medium saucepan, combine cranberries, 1/2 cup sugar, cornstarch, and vanilla extract. Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes. Remove from heat and let cool.
- Make the Crust: Preheat the oven to 350°F (175°C). In a bowl, mix together flour, oats, melted coconut oil, remaining sugar, baking powder, and salt until crumbly.
- Assemble the Bars: Press half of the crumb mixture into the bottom of a greased 9×9 inch baking pan. Spread the cooled cranberry filling evenly over the crust. Sprinkle the remaining crumb mixture on top.
- Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden brown. Remove from oven and let cool completely in the pan.
