Easy Vegan Lemon Tart

This vegan lemon tart features a silky smooth lemon filling made from fresh lemon juice, coconut cream, and natural sweeteners, all encased in a perfectly baked crust. The tart takes about 1 hour to prepare and set, serving 8 people.
Ingredients
- 1 cup almond flour
- 1/4 cup coconut oil melted
- 2 tablespoons maple syrup
- 1/4 teaspoon salt
- 1 cup full-fat coconut cream
- 1/2 cup fresh lemon juice
- 1/2 cup maple syrup (adjust to taste)
- 1 tablespoon cornstarch
- 1 tablespoon lemon zest
- Fresh berries or mint for garnish optional
Instructions
- Prepare the Crust: Preheat the oven to 350°F (175°C). In a bowl, mix together almond flour, melted coconut oil, maple syrup, and salt until crumbly. Press into the bottom of a tart pan and bake for 10-12 minutes until lightly golden.
