Crispy Vegan Almond Brittle

This almond brittle is prepared with sugar, almonds, and a few other pantry staples. It’s cooked until golden, then cooled to achieve a satisfying crunch. This recipe takes about 30 minutes and yields around 12 pieces of brittle.
Ingredients
- 1 cup raw almonds, roughly chopped
- 1 cup granulated sugar
- 1/4 cup water
- 1/4 teaspoon salt
- 1 tablespoon vegan butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
Instructions
- Prepare the Baking Sheet: Line a baking sheet with parchment paper and set aside.
- Cook the Sugar: In a medium saucepan, combine the granulated sugar, water, and salt. Bring to a boil over medium heat, stirring constantly until the sugar has dissolved.
- Add Almonds: Stir in the chopped almonds and continue cooking until the mixture turns a deep amber color, about 10-15 minutes. Watch carefully to prevent burning.
- Incorporate Flavor: Remove the pan from heat and quickly stir in the vegan butter, vanilla extract, and baking soda. The mixture will bubble up.

- Cool and Break: Allow the brittle to cool completely at room temperature (about 15-20 minutes), then break it into pieces to serve.
