This cake is loaded with mixed dried fruits, including raisins, sultanas, and cranberries, alongside a warm blend of spices such as cinnamon, nutmeg, and ginger. It requires about 1.5 hours to bake and serves approximately 10-12 people.

Ingredients

  • 2 cups mixed dried fruits (raisins, sultanas, cranberries)
  • 1 cup orange juice
  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • Zest of 1 orange
  • 1/2 cup almond or coconut milk

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
