Easy Vegan Trail Mix Clusters Recipe

This vegan trail mix clusters recipe features a mix of oats, nut butter, and your favorite trail mix ingredients such as nuts, seeds, and dried fruits. It takes about 20 minutes to prepare and yields approximately 12 clusters.
Ingredients
- 2 cups rolled oats
- 1 cup mixed nuts (almonds, walnuts, cashews, etc.)
- 1/2 cup seeds (pumpkin seeds, sunflower seeds, etc.)
- 1/2 cup dried fruit (raisins, cranberries, apricots, etc.)
- 1/2 cup nut butter (peanut, almond, cashew, etc.)
- 1/4 cup maple syrup or agave nectar
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: dark chocolate chips or coconut flakes for topping
Instructions

- Prepare the Wet Mixture: In a small saucepan over low heat, warm the nut butter, maple syrup, vanilla extract, and salt until melted and well combined.

- Form Clusters: Using your hands or a scoop, form the mixture into clusters and place them on a lined baking sheet.
- Chill and Set: Refrigerate the clusters for about 30 minutes to set. Once firm, you can enjoy them immediately or store in an airtight container.
