INGREDIENTS
For the Noodles:
- 400g (14 oz) rice noodles [or soba/ramen]
- 1 red bell pepper, thinly sliced
- 2 carrots, julienned
- 2 cups red cabbage, shredded
- 1 cup edamame, shelled
For the Sauce:
- 160g (⅔ cup) smooth peanut butter
- 60ml (¼ cup) soy sauce [tamari for GF]
- 2 tbsp lime juice
- 2 tbsp maple syrup
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2-4 tbsp warm water
- 1-2 tsp chili garlic sauce
Toppings:
- Crushed peanuts
- Fresh cilantro
- Sesame seeds
- Lime wedges
METHOD
- Boil water in your large pot. Once boiling, add noodles and cook until just tender (usually 6-8 minutes).
- Meanwhile, whisk together all sauce ingredients in your mixing bowl until smooth. Start with 2 tbsp water and add more if needed – you want it pourable but thick.
- Prep your veggies while the noodles cook.
- Drain and rinse noodles with cold water.
- Toss everything together in your large bowl – noodles, sauce, and veggies.
- Top with your chosen garnishes and serve.
CRUCIAL TIPS
- Don’t overcook the noodles – they should be slightly firm
- Sauce too thick? Add water 1 tbsp at a time
- Prep all ingredients before starting – it moves fast!
- For meal prep, keep sauce separate until serving
STORAGE & VARIATIONS
Storage:
- Keeps 3-4 days refrigerated
- Best served room temperature
- Add splash of water when reheating
Variations:
- Swap peanut butter for almond/sunflower butter
